If I'm the AD, I interview both and then make a decision. Is money an issue? Would I be concerned that Harbaugh might jump back to the NFL? If I'm interviewing Harbaugh, why not give Belichick a call? Harbaugh's college records were 4-8, 5-7, 8-5, and 12-1. Good record and got better every year, but that doesn't mean I'm automatically hiring him.
If Saban is the AD, then I would lean toward preferring Smart.
IMO, to compare Smart to Dubose and Shula makes zero sense, and to compare Smart working for Saban to Dubose working for Bob Bockrath makes even less sense than that.
Harbaugh over Kirby.
But my first choice is Arky's new coach BRET BIELEMA.
And a HUGE "heck no!" to Dabo!!!!!!!!!!! A spread offense with no defense? We're not in the PAC-12.
Would never happen but Harbough, obviously. Peterson and maybe David Shaw (if he has another couple good years) would be at the top of my list. I would love to see Kirby as the head man at Bama one day but would like him to prove himself somewhere else first. I think NCST would have been a good fit for him this year.

Jim Harbaugh is the obvious answer but an unrealistic one.
I would interview Kirby. I would see if Gruden was interested. If so, I give him whatever he wants. David Shaw, then Gary Patterson. If those 3 turn me down, Kirby is the guy.
